What a sorry end to the season for the Packers running into a quarterback having a record day.  On the bright side pitchers and catchers report on Feb 12th with the first grapefruit and cactus league games Feb 22nd.   I can just about taste spring.

Last Friday was the 3 year anniversary of my double knee replacement.  So far so good.  Took 2 tylenol last month for back muscle pain.  First pain pills since April of 2010.

Carter is skating Saturday night at the Waupaca High School hockey game.  Should be a full house of Niemuth’s in attendence.

, but few understand the meaning of the term. True “Diver” Scallops are those that are hand harvested from the ocean floor by professional fishermen who are licensed scuba divers. More often than not, Chefs and customers are told they are purchasing a “Diver” Scallop without knowledge of how to actually to verify what they are really buying. The truth of the matter is that less than 1% of all the scallops harvested are really those hand harvested by a diver

. And we believe the very best come from our own local inshore Maine coast.

Since this practice was first pioneered in the late 1980’s for the late legendary chef Jean-Louis Palladin, Maine Diver Sea Scallops have become an industry standard for the ultimate in fresh, pristine sea scallop. A few ways to identify a true Diver Scallop are that the scallop meat (actually the shucked abductor muscle) should be firm and stand up solid when laid on a surface. The scallop meat itself should react with a pulse when snapped by a finger to show that the mussel is still full of oxygen, which occurs when harvested by hand without the stress of being dragged in a scallop dredge. There should be no white liquid present in the container or liquid from the scallop when seared, the telltale of soaking” in preservatives. These are simply the sweetest, best sushi quality scallops available anywhere.

 

The Scallop fishery in Maine is a protected resource, open only from December until April, with daily catch limits strictly enforced. Specials for week of January 7th 2013

Happy New Year and welcome to all the first time customers we saw last week.  Thank you so much for shopping with us.

Carter hasn’t been feeling well the last two weeks.  He missed Hockey practice last Wednesday and Pre School on Thursday.  Kenzie is more wide awake and smiles and coos.  She is going to be a pistol next fall and winter.

I was looking on the internet for San Francisco Cuizine ideas but nothing jumped out after Rice a Roni and sourdough bread.  Maybe salmon, clam chowder and crab Louis are the 3 most mentioned dishes.  Let me know if you have any better Ideas.   Just had a gentleman in asking about a turduchen for Saturday.  Don’t think that originated in San Fran.  Let me know.
