On the way back to Appleton from Waupaca this afternoon I flutered my fingers at Kenzie and said “go to sleep.”  She promptly did the same thing back at me all bright eyed and bushy tailed.  By Fremont she was asleep and didn’t wake up when her mom took her out to the truck.

Fresh seafood for Tuesday will be mahi Mahi.

Fresh seafood for Wednesday will be Ora King Salmon, Rainbow Trout whole, Canadian Smelt and Atlantic Cod.

Fresh seafood for Thursday will be Chilean Sea Bass and Canadian Walleye.

Fresh seafood for Friday will be Sole, Stuffed Sole (George is experimenting with different stuffings) Scottish Salmon, Wild Gulf Shrimp, Haddock/cod/perch (We’ll see what comes in) Yellowfin Tuna and Day boat Scallops.

I will try to get Live Lobster and Clams, supplies are very tight and prices are up because of the weather in New England.  Live Oysters are easy, they come from Virginia.  920 734 4905 to order

BBQ Pork Back ribs came out today, my best batch yet.  I will be doing some smoked beef brisket later this week also.

Fresh Hams are coming in on Tuesday for Easter.  We will brine them for a week or so then about 16 hours in the smokehouse.  Call 920 734 4905 to order your Easter Ham or get a Fresh Ham to make your own ham or a nice pork roast.  Easter is April 5th, only  a month away.  That is also the next day we will be closed until Thanksgiving.
